Kyocera 14cm Santoku Knife - Black Ceramic Blade
Amazing.. but potentially fragile
I treated myself to one of these for Christmas after having become aware of ceramic knives on a cooking course.
Basically, ceramic is significantly harder than steel, therefore the edge that can be achieved, and the duration that edge is held, is significantly longer than on a normal knife.
The most obvious difference is that the knife blade is black. A white version is also made, though apparently the black is a harder material.
In use, the knife is well balanced, with a comfortable handle. The sharpness is incredible, able to slice thinner than a peel on things like lemons. Nothing stains or sticks to the blade so it's easy to clean and it's very light.
There are two major drawbacks though - one, the knife CANNOT be sharpened at home. I believe Kyocera can resharpen them, however I don't know how involved this will be. Using a 'normal' steel will ruin the knife.
Secondly, ceramic is fragile - the knife has instructions...
